Chef Connie Powers travelled to Northeastern Ontario to prepare a sustainable meal using local products. Her recipe for a smash burger, featuring Bison du Nord’s 100% grassfed bison meat and fresh greens from Spring Bloom Acres farm, is delicious and easy to make!

INGREDIENTS
Patties
- Large flour tortillas
- 500g (1.1 lb) Bison du Nord ground meat
- Salt and pepper
“Big Mac” sauce
- 1/4 cup onion, finely chopped
- 1 cup mayonnaise
- 1/4 cup relish
- 2 tbsp mustard
- 1 tsp vinegar
- 2 tsp sugar
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp garlic powder
Garnish
- Fresh Spring Bloom Acres greens, shredded
- Onion, finely sliced
COOKING DIRECTIONS
- Mix the ground bison meat in a medium bowl. Salt and pepper to taste.
- Chop the onion and mix the “Big Mac” sauce ingredients in a separate medium bowl. Cut fresh greens on the side.
- Flatten approx. 100 g of bison meat onto a tortilla shell.
- Add some olive oil to your cast iron pan and heat. Place the tortilla, meat side down, onto the hot pan.
- Cook for 3-5 minutes.
- Remove from pan, add sauce, shredded greens, and finely sliced onion.
- Fold the tortilla in half and feast! Makes 4 to 6 burgers.
