Bison smash burger

Chef Connie Powers travelled to Northeastern Ontario to prepare a sustainable meal using local products. Her recipe for a smash burger, featuring Bison du Nord’s 100% grassfed bison meat and fresh greens from Spring Bloom Acres farm, is delicious and easy to make!

INGREDIENTS

Patties 

  • Large flour tortillas
  • 500g (1.1 lb) Bison du Nord ground meat
  • Salt and pepper

“Big Mac” sauce

  • 1/4 cup onion, finely chopped
  • 1 cup mayonnaise
  • 1/4 cup relish
  • 2 tbsp mustard
  • 1 tsp vinegar
  • 2 tsp sugar
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp garlic powder

Garnish

COOKING DIRECTIONS

  1. Mix the ground bison meat in a medium bowl. Salt and pepper to taste.
  2. Chop the onion and mix the “Big Mac” sauce ingredients in a separate medium bowl. Cut fresh greens on the side. 
  3. Flatten approx. 100 g of bison meat onto a tortilla shell.
  4. Add some olive oil to your cast iron pan and heat. Place the tortilla, meat side down, onto the hot pan.
  5. Cook for 3-5 minutes.
  6. Remove from pan, add sauce, shredded greens, and finely sliced onion.
  7. Fold the tortilla in half and feast! Makes 4 to 6 burgers.
